Sushi Chef Pay in Japan vs Abroad: What Your Candidate Compares

A chef in Japan compares your offer with about ¥3.79 million a year: the MHLW average for cooks of ¥286,600 a month plus a ¥351,600 bonus. Adjusted for price levels (World Bank PPP, 2025), the US median for chefs is about 1.7 times that, the Singapore, UK and Hong Kong medians 1.1 to 1.2 times, and the Toronto median about the same. Converted at the exchange rate the gaps look larger, but that is not a difference in living standards.

1. Pay in Japan: the candidate's benchmark

Japan has no wage statistic for sushi chefs either. The closest is the MHLW Basic Survey on Wage Structure category "food preparation workers" (飲食物調理従事者).

Average age is 44.9 and average tenure 9.2 years; the monthly figure includes overtime. The National Tax Agency's 2024 survey puts average pay in accommodation and food services at ¥2,793,000, the lowest of any industry, against ¥4.78 million for all industries. That average includes part time staff, so use the MHLW figure for a full time chef.

What employers abroad often miss: cooks are in demand in Japan too. The job openings to applicants ratio for cooking occupations (including part time) was 2.18 in July 2026, against 1.05 for all occupations. 2. How many times Japanese pay?

The table takes one representative figure per market (details on the country reference page) and compares it with Japan's ¥3.79 million two ways: at the ECB reference rate of 25 September 2026 (US$1 = ¥157.59), and by the World Bank's PPP conversion factor for private consumption (2025, updated July 2026). Ratios are our calculation.

The exchange rate ratio tells the chef what the pay is worth sent home. The PPP ratio is closer to what it buys where they will live, which is the one that matters to someone moving. Against the male average (¥4.33 million) every ratio falls by a little over a tenth.

Three conclusions. Sponsored hires in the US and Australia pay clearly more than Japan even after prices. In Singapore, the UK and Hong Kong the median is not far above Japan; only upper band pay makes a real difference. At the Toronto median the chef gains nothing, and the pay falls below Canada's high wage LMIA threshold (C$36.92 an hour in Ontario), which makes the hire itself harder unless you pay more.

3. What this comparison does not show

These are before tax comparisons. Take-home pay depends on each country's income tax and social insurance, which PPP does not capture. Working out the net figure a chef actually wants is covered in designing pay for a chef from Japan.

• The measures differ. Japan is an average including overtime and bonus; the US, UK and Singapore are medians; Australia is a visa floor. Singapore's monthly figure times 12 leaves out any annual bonus.
• Rent is only part of the price level. PPP reflects national prices. Central rents in Sydney, New York or Singapore weigh far more, so whether you provide housing changes the comparison.
• Japanese pension and health insurance. A chef hired locally may drop out of Japan's employees' pension, and that loss does not show in a pay comparison. See pension and health insurance for chefs abroad.

4. Using the comparison when you recruit

Candidates convert the gross figure themselves and get it wrong in both directions: "not as much as I thought" or "three times my pay". Giving them a sourced comparison first saves weeks.

1. State the offered salary in local currency.
2. Give the yen figure with the exchange rate and date you used.
3. Give the PPP multiple of the Japanese average.

• Turn your planned salary into a PPP multiple of Japanese pay, as in the table.
