Hiring basics

How to Find Japanese Chefs to Hire: Where the Candidates Are

The four pools of Japanese chefs an employer can hire from, how big each is, how to reach each one, a plan for six weeks or six months, and a sheet to measure which channel works.

Updated September 27, 2026 WashokuJob

The Japanese chefs you can hire sit in four pools: people already living in your country, working holiday makers aged 18 to 30, chefs working in Japan, and chefs in Japanese restaurants in other countries. Reach the first two through local Japanese networks, referrals and Japanese language listings; the third through Japanese job sites, schools and former colleagues; the fourth mainly through referrals. No official data shows which channel chefs use most, so measure your own.

For employers deciding where to put a vacancy for a Japanese or sushi chef. This page covers where the candidates are and how to reach each group, sequenced by how soon you need someone. Disclosure: this site's publisher runs a job site, so channels are described by type, never by brand. How much each channel costs per hire is on agency vs job board; Japan's channels and rules are on recruiting channels in Japan; the full hiring sequence is on how to hire a Japanese chef.

1. The four candidate pools and how big they are

No government body or independent survey publishes how Japanese chefs find jobs abroad. What is published is the size of each pool.

PoolOfficial size indicatorWork rights
1. Japanese already living in your country1,298,170 Japanese nationals abroad on 1 October 2025: 709,684 long term residents, 588,486 permanent residents. US 416,380; Australia 105,566; China 92,928; Canada 75,316; Thailand 72,113; UK 62,270. Cities: Los Angeles 63,972; Bangkok 51,297; New York 38,251; Singapore 33,397; Shanghai 31,733Permanent residents and spouses usually can work; long term residents include students and staff of other employers, so check each case
2. Working holiday makersJapan had working holiday arrangements with 32 countries and regions on 1 April 2026. Canada's 2026 quota for Japan: 6,433. UK Youth Mobility Scheme: 6,000 placesYes, for the visa's term; ages 18 to 30 in Australia, Canada and the UK
3. Chefs working in JapanJob openings per applicant for food preparation work in Japan: 2.18 in July 2026, against 1.05 for all jobsNeed sponsorship
4. Chefs in Japanese restaurants in other countriesAbout 181,000 Japanese restaurants outside Japan in 2025 (Asia 112,400; North America 29,400; Europe 19,200). No data on how many chefs move between countriesNeed sponsorship in your country

Pool 3 is courted at home: with more than two openings per applicant, a good chef in Japan rarely has to search, so many respond to an approach rather than scanning job boards. Pool 1 is the only one with no visa step. Check the MOFA figure for your city to judge how deep it is.

The required local ads rarely find the Japanese chef, but they must run before a sponsored application, so start them on day one. For referral schemes see referral programmes for restaurants; for the Japanese ad itself, writing a job ad for chefs in Japan.

3. Plan by urgency: six weeks or six months

Needed in six weeks. Only pools 1 and 2 can start that soon.

  1. Week 1: ask your team for referrals; post in local Japanese community channels; publish a Japanese language listing that says "must hold the right to work in [country]".
  2. Weeks 2 and 3: interviews and a paid trial shift, following trial shift rules. Check work rights documents.
  3. Week 4: offer. Weeks 5 and 6: notice period and start.

Needed in six months. Run all four pools. Start the required local ads and the Japan search together, and follow the week by week plan in how to hire a Japanese chef.

Building a pipeline over a year. One or two school relationships, a standing referral bonus, and a short video of your kitchen that you can repost each time you hire.

5. Measure your own channels

Ask every applicant where they saw the job, on the application form. Use a separate link or address per channel where you can. The only number that settles it is hires still with you after 12 months.

7. What to do this week

  1. Decide whether the role can wait six months; if not, limit the search to pools 1 and 2.
  2. Look up the MOFA count for your city.
  3. Send the referral ask to your team.
  4. Start any ad your visa route requires.
  5. Set up the tracking sheet before the first application arrives.

Figures that expire: MOFA publishes the overseas nationals count each year (as of 1 October); MHLW job openings ratios monthly; MAFF's restaurant count has been published every two years, the last in November 2025; working holiday quotas are set each year; the MAFF certification total is as of 31 March 2026. Checked 27 September 2026.

Frequently asked questions

Where do Japanese chefs look for jobs abroad?

No government body or independent survey measures it. In practice they hear through former colleagues and teachers, Japanese language job sites, school careers offices, social media and the local Japanese community. Track which of these brings your own hires.

How can I find a Japanese chef who already lives in my country?

Ask your staff for referrals, post in local Japanese community channels, and use a Japanese language listing that states the job needs local work rights. MOFA's count for your city shows how large that community is.

Can I hire a Japanese chef on a working holiday visa?

Yes, where your country has an arrangement with Japan; there were 32 countries and regions on 1 April 2026. Applicants are generally aged 18 to 30 and the visa is time limited, so it suits a station role rather than a long term head chef.

Do Japanese culinary schools help place graduates abroad?

Some do. Schools may place students and graduates free of charge, but each decides whether to accept vacancies abroad. New graduates rarely meet visa experience rules, so ask about alumni with a few years' experience.

How soon will I get applicants?

We found no official figure for any channel. Referrals and local community posts can bring candidates within days; sponsored routes also require local ads that run for a fixed time first, such as 14 days in Singapore and 4 weeks in Australia.

General information, not legal or immigration advice. Rules on recruiting in Japan, on working holiday visas and on required local ads change; check the sources below before you commit to a channel.
