How Much to Pay a Sushi Chef in London (2026) and Who You Can Hire

London sushi chef pay in 2026 against the legal minimum, London Living Wage and ONS chef median, the cost of one hire with NI and pension, where Japanese candidates are, and a week by week plan to a start date.

Updated September 27, 2026 WashokuJob

Budget £17 to £19 an hour for a sushi chef in London, which is roughly £40,000 to £45,000 a year on a 45 hour week. That is the range London sushi restaurants were advertising in September 2026, well above the £12.71 legal minimum and the £14.80 London Living Wage. You cannot sponsor a new chef from Japan, so you are hiring people who already have the right to work in the UK, above all Youth Mobility Scheme holders.

For London restaurant owners, GMs and group HR pricing a sushi chef role. This page covers London pay, where the candidates are, the cost of one hire and a hiring timetable. The visa rules since July 2025 are covered in hiring a Japanese chef in the UK after 2025, the Youth Mobility Scheme in the YMS guide for restaurants, and a head office opening in London in opening in London without bringing a chef from Japan.

1. What London pays a sushi chef

No official source publishes a London sushi chef salary. ONS counts all chefs together, from hospital kitchens to omakase counters. So the ladder below mixes two kinds of figure, and labels each one.

RungFigureWhat it is
Legal minimum, 21 and over£12.71 an hourNational Living Wage from April 2026 (GOV.UK)
London Living Wage 2025/26£14.80 an hourVoluntary rate many candidates use as their floor (Living Wage Foundation)
All chefs in London, median£15.17 an hour; £34,120 a year full timeONS ASHE 2025 provisional, SOC 5434, London
Sushi chef, advertised£17 to £18 an hour (SW1); £19.21 an hour including tronc (Canary Wharf)Job ads on Indeed UK, checked 27 September 2026
Head chef at a sushi chain site, advertised£37,300 to £39,300 a year (Kingston)Same check
Former Skilled Worker general threshold£41,700 a yearNo longer usable for new chef sponsorship; a useful check for a senior counter role

The job ad figures are a snapshot, not a survey. Most London sushi ads we checked did not state pay at all, which is itself useful: if you publish a number, you stand out.

Watch the hours. The ASHE median of £34,120 works out at £14.58 an hour on a 45 hour week, below the London Living Wage. A candidate will do that sum. At £17 an hour and 45 hours, the year is £39,780; at £19.21 it is £44,951.

How to set your number:

  1. Start at £17 an hour for a chef who can break down fish and run a station alone.
  2. Go toward £19 or above for someone who will serve at the counter, order fish and train juniors.
  3. Say whether the rate includes tronc. Tips and service charge cannot be used to reach the legal minimum, and since 1 October 2024 all tips must go to workers under a statutory code. See service charge and tips rules.
  4. Put the weekly hours and days off in the ad. A 45 hour week with two days off together is a different offer from 55 hours with split shifts.

2. Where London's candidates are

Japan's foreign ministry counted 30,515 Japanese nationals in Greater London on 1 October 2025, down 3.5% on the year. The UK total was 62,270, and 48% of them (29,955) were permanent residents. That settled half of the community can work for anyone, with no visa limit.

In practice your applicants come from four groups:

Your real competition is the other Japanese restaurants in London fishing in the same small pool. The ads we checked were from central London (SW1, W1, Canary Wharf) and outer London chain sites. For where Japanese cooks search, see where Japanese chefs look for jobs abroad.

3. Who you can legally hire, in short

Since 22 July 2025 chefs (SOC 5434) are a medium skilled occupation on neither shortage list, so you cannot sponsor a new chef from abroad. You can hire anyone who already holds the right to work, and you must check it before the first shift. Everything else, including what happens when a sponsored chef's visa comes up for renewal, is on the UK page. For the checks themselves, see right to work checks without sponsorship.

4. What one hire costs you

Two worked examples, using official figures as the salary so you can see the method. Employer National Insurance is 15% above £5,000 a year (2026/27). Minimum employer pension is 3% of earnings between £6,240 and £50,270.

LineAt the London chef medianAt £41,700 (senior counter)
Salary£34,120£41,700
Employer NI (15% above £5,000)£4,368£5,505
Employer pension (3% of qualifying earnings)£836£1,064
Visa costs for a YMS hire£0 (the candidate pays)£0
Annual cost to you£39,324£48,269

Add your own figures for the ad, a paid trial shift, and any arrival help for a YMS hire (a first month's room or a deposit loan). Employment Allowance can cut your business's NI bill by up to £10,500 a year if you qualify, but it applies to the whole payroll, not one hire. The YMS candidate pays the £340 visa fee, the £776 a year health surcharge and must show £2,530 in savings.

5. Week by week to a 1 February 2027 start

This assumes a YMS candidate still in Japan. A candidate already in London cuts it to about six weeks plus their notice period.

7. What to do this week

Figures that expire: the London Living Wage for 2026/27 is announced on 15 October 2026 (employers have until 1 May 2027 to apply it); the National Living Wage changes each April; ONS publishes provisional ASHE for 2026 in the autumn; the job ad range is a snapshot from 27 September 2026.

Questions employers ask

How much should I pay a sushi chef in London?

London sushi ads in September 2026 offered £17 to £19.21 an hour, about £40,000 to £45,000 a year on 45 hours. The legal minimum is £12.71 and the voluntary London Living Wage is £14.80. Pay toward the top of the range for someone who will serve at the counter and train others.

Can I sponsor a sushi chef from Japan for my London restaurant?

Not as a new hire. Since 22 July 2025 chefs are medium skilled and on neither shortage list, so new Skilled Worker sponsorship is closed. You can hire people who already have the right to work, including Youth Mobility Scheme holders.

Is the London Living Wage compulsory?

No. Only the National Living Wage (£12.71 from April 2026) is compulsory. The London Living Wage is a voluntary rate, but candidates compare offers with it, and the ONS median for London chefs is only 37p above it.

What does a sushi chef cost me on top of salary?

Employer National Insurance at 15% above £5,000 and at least 3% pension on qualifying earnings. At a £34,120 salary that adds about £5,200 a year; at £41,700 about £6,600. A YMS hire costs you nothing in visa fees.

How long does it take to hire a Youth Mobility Scheme chef from Japan?

Allow about 14 weeks from advert to first shift. GOV.UK says most YMS decisions come within 3 weeks of applying, and a candidate can apply up to 6 months before travel.
