Updated September 27, 2026 WashokuJob

Los Angeles sushi chef jobs advertised in September 2026 paid mostly $22 to $28 an hour, often plus tips, and salaried sushi chef roles $60,000 to $90,000. The floor is the city where the restaurant sits: $18.42 in the City of Los Angeles, $16.90 in Torrance or Gardena. California allows no tip credit, and a salaried head chef must earn at least $70,304 in 2026 ($72,384 from January 2027) to be exempt from overtime.

This page covers hiring a sushi chef or kitchen staff into a restaurant operating in the Los Angeles area: pay, local rules, candidates and what to offer. For a company in Japan planning an LA opening and deciding who to send, see opening in Los Angeles: who to send and when. Tip pools are covered in tip pooling rules for kitchen staff and visa routes in US visa options for restaurants.

1. What to pay: official data and what competitors advertise

Check this first. A salaried chef in California is exempt from overtime only if the duties qualify and the salary is at least twice the state minimum wage for full time work: $70,304 in 2026 and $72,384 from 1 January 2027. The BLS median for chefs and head cooks in the LA metro is $69,990, below both lines. Pay a head sushi chef the median on salary and you owe overtime for every hour over eight a day or 40 a week. Pay above the line, or pay hourly.

BLS has no sushi category. These are the Los Angeles, Long Beach and Anaheim metro figures for the kitchen ladder:

Chefs and head cooks$48,310$69,990$80,850$102,760

What LA employers advertised on Culinary Agents and the Japanese-language board Vivinavi Los Angeles in the four weeks to 27 September 2026 (a sample, not a survey):

Omakase counter sushi cook (Encino, Beverly Grove)$24 to $26 an hour

Salaried sushi chef, long running sushi market restaurant$60,000 to $90,000

Many Japanese-language postings gave no figure. With 15 or more employees that breaks the law (section 3).

How to set your number:

2. Minimum wage by city, overtime and tips

Where the restaurant isMinimum wageEffective
City of Los Angeles (Little Tokyo, Sawtelle, Downtown)$18.421 July 2026
Unincorporated Los Angeles County$18.471 July 2026
Santa Monica$18.471 July 2026
Pasadena$18.571 July 2026
Malibu$17.911 July 2026
West Hollywood$20.251 January 2026
Torrance, Gardena, Costa Mesa, Irvine and other cities without their own ordinance$16.90 (state), $17.40 from 1 January 20271 January 2026

Use the city that contains the restaurant. Hotel restaurants in Los Angeles, Santa Monica, West Hollywood and Long Beach may fall under higher hotel worker rates.

3. The job ad and the pay scale rule

Under Labor Code section 432.3, an employer with 15 or more employees must put the pay scale in every job posting, and must give it to any job board or agency posting for it, which must publish it. Since 1 January 2026 the pay scale means "a good faith estimate of the salary or hourly wage range that the employer reasonably expects to pay for the position upon hire", so one wide range covering every role fails. Any employer must give the range to an applicant who asks. You may ask about salary expectations but not salary history. Penalties run from $100 to $10,000 per violation; a first violation is not fined if you show all open postings were fixed.

Copy and adapt. Post both versions:

5. Where the candidates are

The Los Angeles metro has 63,972 Japanese nationals, the most of any city outside Japan (MOFA, 1 October 2025), and San Diego adds 8,098. The postings we read cluster in four places, which is also where to look:

Post in Japanese on community boards as well as on English job sites; in our sample most cook and helper roles were on the Japanese board. A cook who commutes from Torrance to Sawtelle is a candidate for a South Bay kitchen. Check work authorization on Form I-9 at offer. US citizens and green card holders can move freely; someone on an E-2 or L-1 is tied to the employer that sponsored them. Plan to train: see training local staff in Japanese cuisine.

The federal unemployment line is the base 0.6% ($42) plus California's possible 2026 credit reduction, estimated by the Department of Labor in January 2026 at up to 5.3 points; the final figure is set in November 2026. Not included: daily overtime, workers' compensation, benefits, the manager's certification exam and advertising.

7. Week by week, from ad to first shift

WeekWhat happens
1Look up the minimum wage for the restaurant's city. Set the range. Decide salaried exempt (above the line) or hourly.
1 to 3Post in English and Japanese, with the range if you have 15 or more employees. Phone screen.
4Paid trial shifts for the best two or three, then a final interview.
5Offer letter and the section 2810.5 pay notice. Agree the start date.
5 to 7Candidate works notice at the current job.
7First shift. Form I-9 section 1 on day one, section 2 within three business days.
7 to 11Food handler card course on paid time, within 30 days of hire.
19Three month review. Recheck pay before 1 January if the threshold or local minimum changes.

This week: confirm which city your address sits in, compare your head chef's salary with $72,384, and write the range into the ad. A chef brought from Japan runs on a longer calendar; see opening in Los Angeles and the E-2 visa for restaurant staff.

Figures that expire: the state minimum wage and exempt salary (next change 1 January 2027), local minimum wages (most change 1 July), BLS metro wages (May 2026 data due spring 2027), the federal unemployment credit reduction (set November 2026), and advertised pay (read 27 September 2026). All rechecked on 27 September 2026.

Questions employers ask

How much does a sushi chef make in Los Angeles?

Postings we read in September 2026 offered sushi chefs mostly $22 to $28 an hour, often plus tips, and salaried sushi chef roles $60,000 to $90,000. BLS puts the metro median for chefs and head cooks at $69,990.

Can I pay my head sushi chef a salary with no overtime?

Only with genuinely managerial duties and a salary of at least $70,304 in 2026, or $72,384 from 1 January 2027. Otherwise pay overtime.

Which minimum wage applies to my restaurant?

The rate of the city the restaurant is in: $18.42 in the City of Los Angeles, $20.25 in West Hollywood, and the $16.90 state rate in cities without their own, such as Torrance and Gardena.

Can I require a California Food Handler Card in the job ad?

No. You may not make an existing card a condition of hire. The new employee gets it within 30 days, on paid time, at your cost.

Do I have to put a pay range in a Japanese-language ad?

Yes, with 15 or more employees. The rule covers every posting in any language, and the board must publish the range you give it.

General information checked against official sources on 27 September 2026, not legal or immigration advice. Advertised pay figures are a sample of public postings, not a survey. Local wage rules change every year; confirm current figures with the city and state or with employment counsel.
