Sushi Chef Salary in NYC and the Rules for Hiring One

What New York sushi counters advertise in 2026, BLS pay for every kitchen role, the pay range rule for job ads, spread of hours and tip credit limits, a first year cost total and a week by week hiring schedule.

Updated September 27, 2026 WashokuJob

In New York City, advertised sushi cook jobs in September 2026 paid mostly $22 to $32 an hour, and salaried head or sous sushi chef roles $75,000 to $110,000. The legal floor is $17.00 an hour, and a salaried chef must earn at least $1,275 a week to be exempt from overtime. Every ad must show a real pay range, and a counter chef should be paid the full minimum wage, not a tip credit wage.

This page covers hiring a sushi chef or kitchen staff into a restaurant operating in New York City: pay, local rules, where candidates are and what to offer. For a company in Japan planning a New York opening and deciding who to send, see opening in New York: who to send and when. Tip pooling in depth is in tip pooling rules for kitchen staff, and visa routes in US visa options for restaurants.

1. What to pay: official data and what competitors advertise

The Bureau of Labor Statistics has no sushi chef category, but its kitchen figures give the spread. They cover the whole New York, Newark and Jersey City metro, including lower paying suburbs, so treat them as a floor for Manhattan.

BLS occupation, NY metro, May 202525th percentileMedian75th percentile90th percentile
Chefs and head cooks$55,070$71,780$89,860$120,370
First-line supervisors of food preparation (sous chef level)$19.48/hr$23.41/hr$29.22/hr$37.62/hr
Cooks, restaurant$17.66/hr$21.03/hr$22.75/hr$26.08/hr

Dishwashers$16.81/hr$17.15/hr$19.13/hr$22.08/hr

Because every ad must carry a range, competitors' pay is visible. We read sushi postings on Culinary Agents and the Japanese-language board Vivinavi New York on 27 September 2026 (21 postings, a sample, not a survey):

SegmentAdvertised pay
Takeout, fast casual, market sushi counter$18 to $25 an hour (one weekend role up to $33)
Neighbourhood and upscale casual sushi cook or chef$20 to $35 an hour, most between $22 and $32
Omakase, fine dining and private club sushi chef or cook, hourly$23 to $31 an hour; counter roles serving guests $17 to $23 an hour plus tips
Sushi sous chef, salaried$75,000 to $80,000; one fine dining listing $80,000 to $110,000
Head or executive sushi chef, salaried$75,000 to $85,000; one Japanese chain executive chef $120,000 to $140,000

How to set your number:

2. The job ad: a real range is the law

The NYC salary transparency law covers employers with four or more employees (owners count) advertising a job done in the city. The ad must state the minimum and maximum pay you honestly expect to offer; "$20 an hour and up" fails. The range is base pay, so tips and bonuses sit outside it. A first violation fixed within 30 days of notice is not fined; uncured ones can cost up to $250,000. State Labor Law 194-b adds the same range duty plus a job description.

Copy and adapt. Post both versions:

3. Kitchen pay rules: minimum wage, overtime, spread of hours, tips

Tips, in short. Back of house cooks cannot be paid a tip credit wage, and a mandatory tip pool can pay out only to food service workers (12 NYCRR 146-2.16). A counter sushi chef could in theory be a tipped food service worker, but the tip credit is lost for any day on which non-tipped work, such as breaking down fish or making rice, takes two hours or more than 20 percent of the shift (146-2.9). That describes most sushi chefs most days. Pay the full $17.00 or more. A chef who manages the kitchen should be paid a salary and bonus, not a share of the pool.

4. The Food Protection Certificate

The Health Code requires a supervisor with a Food Protection Certificate on site whenever you are open, so split shifts usually need two or three holders. The online course is free; the in-person exam costs $24 at the Health Academy in Manhattan. A Japanese study guide exists and the exam is offered in 36 languages besides English; confirm Japanese when you book.

5. Where the candidates are

The Health Department's inspection dataset listed 1,063 restaurants with Japanese cuisine when we queried it on 27 September 2026 (Italian: 1,009): Manhattan 560, Brooklyn 239, Queens 186, Staten Island 46, the Bronx 31. Within Manhattan, 242 sit in the downtown ZIP codes (East Village, Lower East Side, SoHo, Greenwich Village, Chelsea, Tribeca) and 202 in Midtown. ZIP 10003 alone has 57. In Brooklyn the clusters are Williamsburg, Brooklyn Heights and Greenpoint; in Queens, Flushing and Long Island City.

7. Week by week, from ad to first shift

WeekWhat happens
1Set the range from section 1. Decide salaried exempt or hourly. Write the ad in English and Japanese.
1 to 3Ads live. Screen by phone. Book a paid trial shift for the best three (a trial is work and must be paid).
4Trial shifts and a final interview. Check references.
5Offer letter, pay notice, agreed start date.
5 to 7Candidate works notice. Enrol them in the free Food Protection course if they will supervise.
7First shift. Form I-9 section 1 on day one, section 2 within three business days.
8 to 10Food Protection exam. Until they pass, keep another holder on each shift.
19Three month review of pay and duties.

This week: count the Japanese restaurants in your ZIP code, fix the range, and list who holds a Food Protection Certificate on each shift. A chef brought from Japan runs on a much longer calendar; see opening in New York and the E-2 visa for restaurant staff.

Figures that expire: the New York minimum wage and exempt salary (next change 1 January 2027, when inflation indexing starts), BLS metro wages (May 2026 data due spring 2027), unemployment insurance rates (set each January), and the advertised pay sample (read 27 September 2026). All rechecked on 27 September 2026.

Questions employers ask

How much does a sushi chef make in NYC?

In postings we read in September 2026, sushi cooks were offered mostly $22 to $32 an hour and salaried sushi sous or head chefs $75,000 to $110,000. BLS puts the metro median for chefs and head cooks at $71,780.

Can I write "pay depends on experience" in a New York job ad?

No. With four or more employees, the ad must show a minimum and a maximum, or a single figure if there is no flexibility. Tips and bonuses sit outside the range.

Can I pay a counter sushi chef the tipped minimum wage?

In practice, no. The tip credit is lost on any day the chef spends two hours or more than 20 percent of the shift on non-tipped work such as fish prep, which describes most sushi chefs. Pay at least $17.00 an hour and let tips sit on top.

Do I owe spread of hours pay to a well paid sushi cook?

Yes, if they are hourly. In restaurants it applies whatever the regular rate: each day running over 10 hours from start to finish earns one extra hour at the minimum wage.

Can my head chef take the Food Protection exam in Japanese?

The study guide is published in Japanese and the Health Department says the exam comes in 36 languages besides English. Confirm Japanese when booking; the course itself is in English, Spanish and Chinese.
