Ramen Chef Job Description Template in English and Japanese

A complete ramen chef job ad to copy, the same job as a Japanese 求人票, what to cut for a line cook and add for a shop head, official pay reference points and a ten minute way to score applications.

Updated September 27, 2026 WashokuJob

A ramen chef job description should say which ramen job it is (line cook, broth lead or shop head), who owns the broth recipe, how many bowls go out at peak, what time prep starts, the days off, a pay range and the visa position. Below is a complete ad in English and a Japanese 求人票 for the same job, ready to copy, plus a ten minute way to score applications.

For ramen shop owners and small groups writing the ad itself. This page covers ramen roles only. For how to find and test a ramen chef, see hiring a ramen chef. For a head chef across a full Japanese menu, see the head chef job description; for sushi and teppanyaki, see the sushi chef and teppanyaki chef templates.

1. Which ramen job you are filling

"Ramen chef" covers three different jobs. Pick one, because the requirements and the pay change with it.

RoleWhat they ownWho applies
Ramen line cookNoodle cooking, bowl assembly, toppings, station cleaningCooks with a year or two of line experience; trainable
Broth lead (スープ担当)Stock, tare, aroma oil, batch schedule, recipe consistencyRamen cooks who have run the soup pot for a shop
Shop head (店長)All of the above plus ordering, rota, food cost, opening and closingPeople who have run a shop, often in Japan

Most single shops need a broth lead and one or two line cooks. The template below is written for a broth lead, with notes on what to cut for a line cook and what to add for a shop head. If the shop head job is really a head chef job, use the head chef template.

2. Four numbers every ramen ad needs

For a new opening, give the plan instead: "We expect around [number] bowls a day in the first three months."

If you pay by the hour, add the annual figure as well; an hourly rate alone reads as part time work to a chef in Japan. The reasons are in writing a job ad for chefs in Japan.

5. The pay line for ramen roles

No official statistic measures ramen chefs separately. Use the cook and chef figures for your market as the floor, and place each role against them.

MarketCook levelChef levelPeriod
United States (BLS medians)Restaurant cooks $37,390 a year ($17.98 an hour)Chefs and head cooks $62,470 a yearMay 2025
Singapore (MOM medians, monthly)Cook S$1,897; senior cook S$2,515Chef S$3,650June 2025
Australia (award minimum, full time)Cook grade 3 A$1,119.10 a weekCook grade 5 A$1,221.10 a weekFrom 1 July 2026

Sponsorship is harder for ramen roles than for sushi, because some countries treat cooks differently from chefs or exclude some restaurant types. Australia's occupation list, for example, carries a caveat on chef and cook positions in limited service restaurants. Check your route in visa sponsorship for Japanese chefs before you write the visa line.

6. What to ask for and how to score it

The application asks for three things: photos of three bowls, one broth batch schedule, and (at the video call) a spoken walk through of one bowl's spec. Score each out of five:

  1. Batch schedule: are times, weights and temperatures there, including cooling?
  2. Bowl spec: can they give tare, oil, noodle weight and cooking time without hesitating?
  3. Photos: clean rims, consistent toppings, a bowl a customer would photograph.
  4. Pace: have they worked at or above your bowls per hour?

Twelve or more out of twenty goes to a paid trial shift. For trial rules, see chef trial shift rules; for remote tests, skills tests for remote hiring.

7. What to do this week

Figures that expire: BLS wages (next release spring 2027), Singapore MOM occupational wages (published each year around June) and Australian award rates (reset each 1 July). Checked 27 September 2026.

Questions employers ask

What does a ramen chef do?

A ramen chef makes the broth, tare and aroma oil, cooks noodles to spec, prepares toppings, keeps cooling and storage records for the broth, and serves at peak speed. A broth lead owns the soup day to day; a shop head adds ordering, rota and cost.

Should the ad say who owns the recipe?

Yes. Experienced ramen cooks want to know whether they will run your recipe or change it, and who decides. One sentence avoids a disagreement after the chef has moved.

Should I pay a ramen chef by the hour or by the year?

Follow local practice, but when you advertise to chefs in Japan give an annual figure as well. An hourly rate alone reads as part time work there.

Can I sponsor a visa for a ramen cook?

It depends on the country and on whether the job counts as a chef or a cook there. Several routes are narrower for cooks, and some exclude certain restaurant types, so check before promising sponsorship in the ad.

General information, not legal or immigration advice. Employment law, wording rules for job ads and visa conditions differ by country and change over time. Check the current rules where you hire before publishing.
