Hiring a Japanese Chef in Manchester Under UK Rules

Manchester's Japanese restaurants face the same closed door as the rest of the UK: since July 2025 a chef cannot be newly sponsored from Japan. The local difference is money and competition. Chef pay in the North West is below the UK chef median, while pay for all full-time workers in Manchester is above the UK median, and the city is close enough to London that the young, mobile Japanese cooks you can hire will compare offers. 1. Manchester's position under the UK rules

• Chefs (SOC 5434) are "medium skilled". Since 22 July 2025, medium skilled jobs can be sponsored only if they appear on the Immigration Salary List or the Temporary Shortage List, or for extensions by workers first sponsored before that date. Chefs are on neither list.
• Cooks (SOC 5435) are not eligible for Skilled Worker sponsorship.
• The National Living Wage is £12.71 an hour from April 2026.

Nothing in the rules is specific to Manchester or Greater Manchester. What you can influence is how attractive your job is to the people who already have the right to work.

2. Chef pay in the North West and Manchester

ONS earnings data (ASHE 2025, provisional) shows the gap between what kitchens pay and what the wider Manchester job market pays.

Three things stand out. First, a North West chef's median annual pay is about £5,000 below a London chef's. Second, it is about £11,000 below the median for all full-time jobs based in Manchester. Third, the North West median hourly rate for chefs in 2025, £14.00, is only £1.29 above the National Living Wage that took effect in April 2026. The cooks' figure jumped 22.4 percent on the year, which is a reminder that regional occupation estimates come from small samples; use them as a guide, not a precise benchmark.

For a skilled Japanese cook weighing a move, London's higher pay is a real pull. A Manchester offer needs to compete on what the chef keeps after rent, the quality of the role, and the support you give.

3. Where your Japanese chefs will come from

Manchester is a university city, and the Graduate visa route is worth watching: international graduates, including Japanese graduates, can work in most jobs without sponsorship. Few graduates are trained chefs, but it costs nothing to include them in your search.

Japan's foreign ministry counted 62,270 Japanese nationals in the UK as of 1 October 2025 but publishes a city figure only for Greater London, so there is no official count for Manchester. 4. Building a kitchen that does not depend on one visa

With no new sponsorship and a two-year limit on YMS, a Manchester restaurant that relies on one Japanese chef has a single point of failure. The steadier model is:

• A settled head chef or sushi lead, paid well above the North West median.
• YMS cooks on staggered start dates, so one is always mid-contract when another leaves.

5. Next steps for a Manchester restaurant

1. Audit your kitchen: every non-British worker's visa type and expiry. Start extensions early for anyone on pre-July 2025 Skilled Worker protection.
