Sushi Chef Salary in Phoenix and Arizona Wage Rules 2026

Arizona's 2026 minimum wage is $15.15 an hour, but Flagstaff pays $18.35 with no tip credit and Tucson pays $15.45. Phoenix metro chefs earn a median of $61,400 a year (BLS, May 2025); price a trained sushi cook above the $39,170 cook median and a head chef from $65,000 up, since few candidates live locally and the nearest large Japanese-speaking pool is Los Angeles. Budget close to $70,000 in year one salary and taxes for a mid-band offer, and run recruiting on an eight week clock.

1. What to pay: Phoenix, Tucson and Flagstaff

BLS wage data for May 2025, via O*NET, checked directly against onetonline.org on 27 September 2026:

Read the Phoenix row carefully: the chef 10th percentile ($33,970) sits below the cook 10th percentile ($34,940). That is not a real pay cut for chefs; it is what happens when BLS models a percentile from a smaller metro sample of an occupation with a wide spread. Do not quote the chef 10th percentile to a candidate or use it as a floor. Use the median and above.

There is no official figure anywhere for what a sushi chef specifically earns in Phoenix, so set the offer with a ladder rather than one number:

1. Trained cook, still learning the counter. Start at or above the cook median of $39,170 ($18.83/hr). Below that, you are not offering more than a line cook job.
2. Sushi-skilled cook or sous, working the counter unsupervised. Price into the chef range, from roughly $50,000 to $65,000, well clear of the cook median so the move reads as a step up.
3. Head chef, running the counter and training staff. Price from the chef median of $61,400 toward the 90th percentile of $97,730, depending on menu complexity and whether the person also manages the kitchen.

Flagstaff's cook median ($18.63) sits only 28 cents above the city's own $18.35 minimum, so in Flagstaff the wage floor is close to the going rate for cooks; anyone with real sushi skill should expect noticeably more.

2. Minimum wage and sick time, 2026

Two rules to build into a Phoenix-area offer:

• Flagstaff ended its tip credit from 1 January 2026. A Flagstaff kitchen pays cooks and servers the same $18.35 base; there is no discount for tipped roles.
• Arizona's paid sick time law (ARS 23-372) gives one hour for every 30 hours worked. Employers with 15 or more staff may cap annual use at 40 hours; under 15 staff, 24 hours. A two-person sushi counter feels every sick day, and the law protects the person who takes one, so plan a cross-trained backup before you need it.

Tucson's Labor Standards Unit enforces its own ordinance, with civil fines up to $100 per violation per employee per day. If your site sits in Tucson or Flagstaff, follow that city's rate, not the state one; check with the city before you publish a wage.

3. Where the candidates are

Japan's Ministry of Foreign Affairs ranks the 50 cities worldwide with the most Japanese nationals as of 1 October 2025; no Arizona city appears; 50th place had 3,242. We found no official count of Japanese residents or Japanese restaurants in Phoenix, so we do not give one. That is itself useful information: do not plan a search around a local Japanese community that the data does not show exists.
